Easiest Pumpkin Recipe Ever

In our world, October = pumpkin-everything-season (along with every other #psl loving chick in America). I am not the savviest in the kitchen during the rest of the year, so I have spent the last few years mastering one pumpkin recipe that I can bake over and over again during the month of October and leading up to Thanksgiving – they’re THAT good. (Then, once we hit December, it’s mint-flavored goods alldayeveryday.)

Today, the pumpkin-recipe-pinner in you is in luck because I am sharing the easiest, most fool-proof pumpkin recipe out there that is sure to please your pumpkin-loving girlfriends, significant others, coworkers and even those snobby non-pumpkin lovers out there.

{DISCLOSURE: I found the original recipe from someone on Pinterest years ago and have no idea where it came from, but this one is also very similar!}

  • Ingredients: 1 box yellow cake mix, 1 15oz can of pumpkin, 1 bag of dark chocolate chips, 1 tsp pumpkin pie spice, 1tsp vanilla, dashes of cinnamon and nutmeg (and any other fall spices you may have in your cabinet)

  • Step 1: Pre-heat oven to 350 degrees. Mix cake mix, pumpkin and spices together until mostly mixed.

  • Step 2: Add in dark chocolate chips to your liking and continue to mix. I usually use about half a bag per batch, but you may want more or less. You could also add nuts in this step if you like.

  • Step 3: Spoon out dough onto greased baking sheet and bake for approx. 15 minutes. The cookies are done when they are a little stiff to the touch on top, but you don’t want them very brown at all.

  • Step 4: Allow cookies to cool on a baking sheet and indulge!
